Matthiola incana StoX® Champagne | Stock
A breakthrough in stock breeding with unique champagne-peach blooms, exceptional stem quality, and selectable double flowers.
Matthiola incana 'StoX® Champagne' is an innovative premium variety from the revolutionary StoX® Series, combining the robust performance of Japanese stock with the selectability of European breeding. This outstanding variety produces elegant flower spikes in a unique soft champagne-peach shade with warm creamy undertones—a sophisticated colour that quickly became a favourite among florists and flower farmers.
The StoX® Series represents a major advancement in stock breeding. Following a simple cold treatment during the seedling stage, double-flowering plants can be easily identified by their lighter green cotyledons, allowing growers to achieve 100% double-flowered plants through selection. Without selection, plants typically produce approximately 55% double flowers and 45% single flowers.
Strong, woody stems, excellent uniformity, and outstanding vase life make StoX® Champagne an exceptional choice for professional cut flower production. The beautifully fragrant blooms fill both the garden and floral arrangements with the classic sweet, clove-like scent that has made stock a timeless favourite.
The edible flowers also make elegant garnishes for cakes, desserts, salads, and cocktails.

Sowing Instructions
Start seeds indoors or in a greenhouse 5–6 weeks before transplanting. Sow seeds approximately 6 mm (¼") deep and maintain temperatures of 18–24°C (65–75°F). Germination typically occurs within 7–14 days.
For continuous production, sow every two weeks. Stock performs best during cool growing conditions in spring and autumn.
Transplant seedlings when they have 4–5 true leaves into fertile, well-drained soil in full sun.
Do not pinch plants, as each plant naturally produces a single flowering stem.
Double Flower Selection
One of the greatest advantages of the StoX® Series is its easy selection for double flowers.
At the cotyledon stage, expose seedlings to 4–7°C (40–45°F) for 3–4 days. Double-flowering plants develop lighter green, oval-shaped cotyledons, making them easy to identify. Seedlings with darker green, rounder cotyledons will produce single flowers.
This simple selection method allows professional growers to achieve 100% double-flowering plants, making StoX® one of the most advanced stock series available.
Harvest
Harvest stems when one-third to one-half of the florets have opened for maximum vase life, fragrance, and flower quality.
